Eggplant Parmesan

Our Eggplant Parmesan is one of our family's treasured dishes. Simply done with fresh eggplant lightly breaded, the right amount of Mom's tomato sauce - made from hand selected, vine-ripened tomatoes - and then topped with Mozzarella. It has now become one of our customer favorites. We sprinkle a blend of imported cheeses - parmesan and Pecorino Romano - to complete the dish. It is the same today as when I was a kid. COOKING INSTRUCTIONS FOR EGGPLANT PARMESAN:

Do Not Thaw. Keep Frozen Until Ready To Use. Due to variations in all ovens, cooking times and/or temperature may require adjustment. DO NOT COOK IN TOASTER OVENS.

Microwave Oven:

Microwave cooking instructions based on 1100W appliance. For 1250W microwave reduce cooking time.
— Pull back corner of lid to release moisture.
— Leave lid on during cooking.
— Heat on HIGH for 16-18 minutes or until internal temperature reaches 160°F.
— Use plate when removing product from microwave for support.
— IMPORTANT: Carefully remove tray, let stand for 5 minutes before serving.

Conventional Oven:

— Oven must be preheated to 400°F.
— Place on microwave safe plate.
— Leave lid on during cooking.
— Place tray on cookie sheet (for added support) on center rack (at least 6" 8" from heating elements).
— Bake for 50-60 minutes or until internal temperature reaches 160°F.
— Remove from oven on cookie sheet for added support.
— IMPORTANT: Carefully remove tray, let stand for 5 minutes before serving.
